Cell Phone Clause
I asked this girl at my job for her phone so we can hang out and dance. She told me "Not now. I'm not ready to date." She also mentioned something about other guys hitting on her as well. She gave me her reasons: she is separated, and works all day, and has 2 days off that she spends with her dad and doing zumba. I felt like insisting for her number but I didn't. What would you guys have done/would do?
Ok so you asked her for her number to go dance and she said she's not ready to date. See the miscommunication there? You got to correct that if it happens

She probably doesn't view you in a sexual manner...I'd move on and work on new targets and just playfully banter/flirt with her in the meantime. I wouldn't put my hat on it but if you gather the skills necessary in the meantime she may come around - just dont force it. If you create the right sexual tension with a girl she'll never have to wait longer to date - that's just a socially acceptable way of saying I'm not interested (right now)
