I tried to arrange a date with the girl I've been seeing, but she said that she is not able to do so this week 'cause a few things came up. I was wondering if its fine to ask her what happened. I have the intention of just showing her that I care but I don't know if I'll be too invasive of her personal stuff.

Yes if it's a girl you're "seeing" you should just be able to ask her what's up. She should be pretty forthcoming with details.
